Lavender blossom (French lavender from Provence) - an herb valued for its characteristic beauty scent. The small, aromatic, purple flowers of lavender contain approximately 1.5% essential oil, as well as tannins, phenolic acids, phytosterols, anthocyanins, coumarins, and flavonoids. Lavender is valued for its calming properties, also recommended for gastrointestinal discomfort and premenstrual tension. It is used in both herbal medicine (as an infusion) and cooking (as a spice, for example, as an ingredient in Provençal herbs).

In the kitchen: seasoning (best accompanied by rosemary, sage, thyme, oregano and fennel) for meat and Mediterranean dishes, grilled dishes -
Use in moderation, as too much will dominate the taste,
for baking, for drinks and desserts, for flavoring sugar.

In herbal medicine: for preparing a calming infusion.
