CONSISTENCY: Fairly firm, 3 mm thick slices should not fall apart.
APPEARANCE OF THE CUTS: The meat's color in cross-section is pink to dark pink, fat white with a pinkish sheen, and the binding agent is pink. Ingredients evenly distributed. Seasonings visible in cross-section.
TASTE AND ODOR: Characteristic of cured, steamed pork sausage. The taste and aroma of the spices used (marjoram, garlic) are clearly perceptible.
