SURFACE APPEARANCE: Canned food made from cured pork with added phosphates and spices.
A block with a smooth and even surface, surrounded by jelly; a small amount of rendered fat is acceptable. The color of the block is pink to dark pink; slight graying of the part of the block surface under the lid and base is acceptable. The color of the rendered fat is white, straw-like; cloudiness is acceptable. The color of the meat is pink to dark pink; the binding mass is pinkish-beige. Seasonings visible in cross-section.
CONSISTENCY: Solid block, solid jelly at 15 °C, semi-liquid at 18 °C.
TASTE AND ODOR: Suitable for sterilized, canned salted pork. The flavor is mild, not too salty.
