Table sweetener based on erythritol and steviol glycosides

Erythritol is a natural, low-calorie sweetener. It is commonly found in fruits, vegetables, plant seeds, and mushrooms. Erythritol has a slightly sweet taste. Erythritol does not cause tooth decay. After ingestion, it is quickly excreted from the body. Erythritol has the advantage of not having a laxative effect, even in large quantities. Erythritol is enriched with steviol glycosides. Steviol glycosides have been used as a sweetener in South America for hundreds of years. The sweetening power of steviol glycosides is 250 to 350 times greater than that of ordinary sugar. They are extracted from the leaves of a plant called stevia ( Stevia rebaudiana ). The leaves of this plant are soaked in water for a week. The resulting aqueous solution is then purified and dried until steviol glycoside crystals are obtained.

Uses : Use like white sugar. It can be used for cooking, baking, or sweetening, thus reducing the calorific value of prepared foods.
