Beet sourdough, also known as beetroot sourdough or pickled borscht, is an exceptionally healthy liquid with a deep purple or dark violet color, produced through fermentation by converting the sugars found in beets into lactic acid.
The silage has a sour taste and specific smell and is a valuable source of iron, which is needed for the production of red blood cells, vitamin C to support the immune system, as well as folic acid, potassium, magnesium, phosphorus, cobalt, cesium, rubidium and vitamins A, E, B6 and K. Beet sourdough can regulate blood pressure and lower "bad" cholesterol levels; it is also characterized by strong antioxidant properties, which is why its consumption for preventive purposes is recommended to almost everyone.
Beet sourdough is a secret ingredient in homemade borscht, recommended for enhancing the flavor of dishes. A traditional product, unpasteurized, made with naturally occurring cultures of lactic acid bacteria.
