Quinoa, also known as quinoa, has many nutritional and health-promoting properties. It is a source of complete protein, healthy fatty acids, and many vitamins and minerals. Buckwheat is a great source of protein, containing 10 to 16 percent of the body's energy. It's a protein that's more easily digestible than that found in grains, and its value is similar to that of legumes. Buckwheat is rich in unique, non-natural amino acids—especially lysine, which the body doesn't produce itself and should be obtained from food. Lysine is essential, among other things, and helps build protein, especially in muscles and bones.
Millet is easily digestible and gluten-free. It contains little starch and plenty of digestible protein. It is also a source of B vitamins: B1, B2, and B6, and minerals: copper, iron, magnesium, calcium, phosphorus, and potassium. Both millet and buckwheat have alkalizing effects. Thus, they play an important role in restoring the body's acid-base balance. Therefore, millet should be included in an alkaline diet.
