The parsnip (Pastinaca sativa), like the carrot, belongs to the celery family. It is not a native species to Poland—researchers classify it as an archaeophyte. Wild forms occur in Asia, New Zealand, Australia, and Europe.

In Poland, it is found in ditches and wet meadows. At first glance, the plant looks almost identical to its relative, parsley, and for this reason, merchants used to sell it instead of the traditional greens. Unlike parsley, however, parsnip flowers yellow, its leaves are larger, have jagged edges, and should not be eaten due to the toxic substances they contain.

The edible part—the root of Pastinaca sativa—is considerably sweeter and milder, so it can be used to season delicate dishes. Its root bud also differs in shape from that of parsley—it is larger and has the shape of a cone that tapers toward the base. Interestingly, parsnip fruits are also its seeds.
