DESCRIPTION
Orzo (also known as risoni) is a small, dried pasta in the shape of rice grains.
According to the Italians, the grains look like barley. This is why the product is called orzo, which means barley in Italian.
It is a well-known type of pasta in most Mediterranean countries. In Israel, it is called "ptim," in Greece "kritharáki," and in Turkey "arpa şehriye." The product is also known in Arabia.
In Sicily, where orzo comes from, this pasta is mainly used as an addition to soups.
But there are many other ways to prepare it, for example with tomato sauce or pesto, or as a pilaf with grilled vegetables.
Perfect for a quick risotto called orzotto.

PREPARATION
Bring water and salt to a boil. Add the pasta and cook for 7 minutes.
