A well-known and popular spice with an intense aroma are the dried, still-open flower buds of a tropical clove tree. The clove tree is native to the Moluccas, also known as the Spice Islands, from where it spread to many tropical countries. Currently, the largest plantations are located on the islands of Zanzibar and Pemba, Madagascar, Java, East India, Réunion, and other islands in this region. As a spice, cloves stimulate the appetite and aid digestion; they are a component of curry spice. They are used in meat preparation, in sausages, liqueurs, for marinating vegetables and mushrooms, in sauces and ketchups, and in other dishes.
Cloves are indispensable in the baking of gingerbread. They are also used in the preparation of savory dishes, such as braised beef, baked ham, or pâté. And, of course, the most well-known use of cloves for all of us: mulled wine – they're now an essential ingredient in mulled wine and beer.
