Erythritol (E968) is described as an ideal sweetener. Its glycemic index is zero – it does not raise glucose or insulin levels. It has been used as a sweetener in the EU since 2006 and in Poland since 2008. 1 g of erythritol has only 0.2 to 0.4 kcal, while the same amount of regular sugar has 4 kcal. Erythritol occurs naturally in the pollen of flowers, fruits (e.g., pears), mushrooms, and seafood. Its sweetness is 60–70% that of table sugar (sucrose).
