Natural yogurt, also called Bulgarian milk, is a food product made from milk under the influence of thermophilic bacteria at a temperature above 40 degrees Celsius. It has a thick, velvety texture and a slightly sour taste. Turks and Bulgarians argue about whose invention it is, but there is much evidence that the Indians were the first to produce it. Yogurts are a natural source of probiotics, the "good" bacteria that populate our intestines and protect the body from their harmful counterparts. In addition, yogurt contains plenty of easily digestible protein, which is the building block of bones and teeth, as well as calcium and B vitamins, which are necessary for the proper functioning of the body.
Lactose occurs naturally in cow's milk (and not only). Although it's an organic substance, not everyone reacts well to it, which is why it's been removed from our product. The purification process involves adding the enzyme lactase to the milk, which essentially breaks down lactose into glucose and galactose for us. Lactose-free products may have a slightly sweeter taste than their counterparts.
