Unacceptable spots in the center of the cross-section indicate undercooked or uncured meat; unacceptable concentrations of one of the ingredients and the presence of bristles, cartilage, and bones. The consistency is quite firm and elastic. The taste and smell are typical of boiled sausage made from offal; moderately salty, with a distinct taste and smell of added spices.
