Beetroot salad with oscypek
You need:
Lubella pasta sheets 400 g
baked or boiled beets 3 pieces
Oscypek 200 g
dried cranberries 50 g
Balsamic vinegar 3 tbsp
Olive oil 6 tablespoons
Honey 2 tablespoons
Arugula 100 g
Garlic 1 clove
Salt and pepper to taste
Preparation time: 20 minutes

1. For starters...
Cook the pasta according to the instructions on the package.
2. In the meantime...
Slice the beets and oscypek, then quarter them. Make a sauce with honey, vinegar, and olive oil, and season with salt and pepper.
3. It's almost the finish line!
Mix the beets with pasta, cranberries, arugula, feta cheese, and garlic pressed through a press. Pour the sauce over everything.
