DESCRIPTION
Kukicha is a green tea made exclusively from twigs and leaf stems—parts of tea bushes not found in other teas. Hence its name: "kuki" means stem or stick in Japanese. Kukicha is produced during the production of other green teas, when the leaf blades are separated from the rest of the tea leaves. Its flavor is therefore definitely different: more delicate, sweeter, and slightly nutty. Due to its low caffeine content, kukicha is perfect for children, pregnant women, and late in the day. For this reason, it is often recommended in a macrobiotic diet, along with a generous cup of tea. Kukicha is also high in the relaxing theanine. The theanine in the leaves' photosynthesis is converted into tannins, which give the tea a "bitter" aftertaste. Since no photosynthesis takes place in the stems, they are naturally rich in theanine. Moya Kukicha is the highest quality Kukicha produced in the matcha production process, when the leaves and stems are separated from the aracha (tea leaves - the semi-finished matcha product). Unlike regular Kukicha, it is roasted very gently (much shorter than Hojicha). This gives it a stronger aroma and a darker yellow-brown color.
