Milk thistle [Latin: Silybum marianum] is an annual crop from the Asteraceae family, which is relatively easy to find in the wild. Due to its visual similarity, it is often confused with the common thistle. It is characterized by its sharply pointed, spiny leaves and purple flowers. It differs from the thistle, among other things, by its height - it can grow up to 2 meters tall. It originates from the Mediterranean region and is now found mainly in Southern Europe, Egypt, Israel, and Turkey. The seeds (kernels) of milk thistle are valued in herbal medicine.

Thistle seeds contain:

• Silymarin with strong detoxifying, cholagogic, cholepoietic, anti-inflammatory, and antioxidant properties
• Phytosterols, which are characterized by contributing to lowering cholesterol levels and reducing the risk of atherosclerosis and heart attack
• Polyphenolic compounds that seal blood vessels, protect the heart muscle, and additionally lower blood pressure

Sylibin obtained from milk thistle is used intravenously as an antidote for poisoning by the mushroom toxin of the death cap (Amanita phalloides), which causes dangerous liver damage.

Recommended use

Pour a glass (250 ml) of hot water over one teaspoon of ground milk thistle seeds (approx. 3 g) and slowly bring to a boil. Simmer over low heat for about 5-10 minutes, let steep for 15 minutes, strain. Drink in three portions per day.

It can also be used as an addition to salads, shakes, or even sandwiches.

Green Shake with Milk Thistle

Required ingredients:

• 100 g baby spinach
• 1 tablespoon ground milk thistle
• Banana
• 3 stalks celery
• Pear
• 250 ml water

Core the pear and cut into small pieces. Peel the banana and cut the celery into small pieces. Rinse the spinach thoroughly. Put all ingredients in a blender and puree. Cheers!
