Unrefined organic coconut sugar is extracted from the sap of coconut palm flower buds. It is rich in antioxidants and contains acetic acid and enzymes. This action contributes to maintaining normal blood sugar levels. Coconut sugar has a slightly sweet flavor, similar to brown sugar, with a subtle caramel aftertaste. When added to baking, it adds a crispness to your baked goods. Dishes prepared with it have a delicate nutty-caramel aroma.

The main carbohydrate in coconut sugar is sucrose (approx. 75%), followed by glucose and fructose. Coconut sugar has a relatively low glycemic index of 35 (compared to 70 for white sugar), which means it doesn't cause significant fluctuations in glucose concentration. Raw coconut sugar also contains valuable components that are normally removed from sugar during the refining process. These include potassium, magnesium, zinc, and iron. It provides the body with vitamins B1, B2, B3 (PP), and B6. Thanks to the method used to extract organic Intenson coconut sugar, it also contains valuable fiber, namely inulin, which naturally slows the absorption of glucose. Sugar can be used in a 1:1 ratio with cane and beet sugar.
