Cheddar cheese is produced using the so-called curd fermentation process characteristic of this cheese, called cheddaring, combined with the division and piling of the cheese into blocks to facilitate draining and uniform acidification and demineralization of the cheese mass, thus preserving the characteristic organoleptic properties of this cheese variety.
Cheddar cheese is characterized by a compact, firm, plastic, and uniform flesh throughout, with a waxy consistency and a clean, sour, and sharp taste and aroma. Cheddar cheese is also characterized by the absence of eyes.
