Locust bean gum or carob flour is ground into a powder from carob seeds, i.e. carob pods - an evergreen tree found in the countries of the Mediterranean basin, such as as well as in India and Australia.
Carob contains the highest amounts of calcium and potassium, slightly less magnesium and iron, and traces of sodium, nickel, manganese, copper, and others. The powder is also a source of fiber, which prevents constipation and increases the feeling of fullness for longer.
Carob can be used as a sweetener. It is also used in the production of sweet toppings and glazes for cakes, ice cream, dried fruit, shiny chestnuts, chestnut purees, and in the production of fruit jams, marmalades, and jellies. Carob is also an ideal substitute for cocoa and chocolate. It is an excellent ingredient in cakes, bread, and other desserts. Furthermore, carob gum can be used as an effective substitute for eggs.
