Pearl couscous is a product made from durum wheat. It has the shape of round grains with a diameter of approximately 4 mm. Traditionally, it was obtained by grinding wheat in stone mills. Currently, it is made from semolina, meaning by granulating wheat flour with water and additives, followed by sifting it in a special sieve.
