The squash, also called carp or croaker (Brassica napus L. var. napobrassica), is a biennial cultivated plant derived from the cross between collard greens and turnips. It does not occur in the wild. It originates from Russia and Scandinavia, where it is still widely cultivated today.
The calorie value of carp is only 40 kcal per 100 g. This underrated, underutilized, and little-known vegetable boasts an impressive array of nutritional properties. Swedes are rich in zinc, copper, potassium, calcium, iron, phosphorus, magnesium, sulfur, vitamins A, B, C, and K, carotene, and rutin. Due to their satiating fiber content, they are recommended for people on a weight-loss diet.
Swallowtail can be eaten both cooked and raw. It's a great addition to soups and salads, and can also be used to make pancakes or as a potato substitute.
