The parsnip (Pastinaca sativa L.) is a biennial plant in the celery family. It is native to Europe and parts of Asia. It was once as popular as the potato in Poland, but was later replaced by the latter.
Little known today, sometimes confused with their cousin parsley, parsnips are an extremely healthy vegetable. Rich in folic acid, B vitamins, vitamin C, iron, calcium, phosphorus, and potassium, they are low in calories and are recommended for weight loss programs.
Parsnips can be prepared in many different ways - boiled, baked, grilled, roasted, made into chips, added to soup, meat or salads.
