Goya capers are the buds of the thorny caper bush, a plant very popular in Mediterranean countries. They have a dark green color with light spots. They ripen in a day and are harvested immediately. Their quality depends on their size: the smaller, the more valuable. The Polish market mainly offers Fines and Capotes capers. Capers have a characteristic sour, salty flavor, so rinse them thoroughly with water before eating. They are a perfect addition to many dishes, such as poultry, fish, salads, and pizza. Braising capers at high temperatures should be avoided. To preserve their characteristic flavor, they are added to dishes just before serving. Capers also have a positive effect on health, supporting the digestive system and liver, and relieving rheumatic complaints and flatulence.
