The grains of this unique plant boast, among other benefits, a high content of high-quality protein, the building block of muscles and tissues, fiber that supports the intestines, and essential B vitamins for the proper functioning of the body. Ground buckwheat flour does not contain allergenic gluten, it has a low glycemic index, and is also rich in mineral salts such as potassium, phosphorus, selenium, calcium, iron, magnesium, zinc, and copper. It is recommended for baking bread, rolls, cakes, and pasta. It is also a good addition to cookies and pancakes or as a coating for poultry, fish, and vegetables.
