Erythritol is an organic chemical used as a sugar substitute. It occurs in fruit, wine, cheese, and beer and is produced on a larger scale through a safe yeast fermentation process from glycerin. Erythritol belongs to the sugar alcohols - polyols, and its most valuable property is its high sweetness (60 - 80% sucrose), while having zero calories, zero glycemic index, and a very low insulin index II = 2. Erythritol is visually a sugar-like, inconspicuous white powder. This unique sweetener is the best sugar substitute but should be used slightly more than sucrose due to its sweetness. Recommended for tea, coffee, baking, cooking, and desserts.
