These mild-tasting white noodles are an essential part of many Asian dishes. Rice noodles are a source of valuable vitamins and minerals. They are rich in vitamin E, known for its antioxidant properties; B vitamins, which are essential for the proper functioning of the body; iron, potassium, magnesium, zinc; and satiating fiber. Rice noodles go well with stir-fried, steamed, or grilled vegetables and lean meats; and can also be used as a side dish for soup and substituted for their wheat counterparts.

PREPARATION
Boil 2 liters of water, turn off the gas. Add the pasta and let it rest for 2 minutes. Drain the pasta in a colander and rinse with cold water for 1-2 minutes.
