Clarified butter owes its properties to its preparation . Ghee is refined by slowly heating the fat. A white foam forms on the surface of the melted butter, composed of proteins and solids left over from the milk. Traditionally, all the water is evaporated from the fat to make ghee. The resulting butter is naturally preserved: it doesn't go rancid, keeps well at high temperatures, and can be used for frying.

Ghee butter has a golden color and a slightly nutty flavor. This makes it an excellent seasoning and frying fat. Butter can be used for bread, but also for baking, braising, and frying stuffing, donuts, or fries. It can also be added to soups, pasta, grits, vegetables, or fish. Ghee butter can also be used to make the so-called Bulletproof Coffee.
