Xylitol, also known as birch sugar, is a substitute for conventional sugar. However, compared to sugar, this product is much healthier, as it has almost half the calories and a much lower glycemic index (8-12 times), making it safe for diabetics. It produces an alkaline reaction during digestion and is therefore recommended for older people at risk of osteoporosis. It can be used to sweeten beverages and various culinary products.

Xylitol is used as a natural substitute for white sugar for good reason. It looks almost identical and is just as sweet as sucrose. However, it has the advantage of containing significantly fewer calories—by 40%—and its glycemic index (GI) is unusually 14 times lower than that of sucrose. This means that blood sugar and insulin levels rise very slowly after consumption, without sudden spikes. For this reason, it is recommended for diabetics and people trying to lose weight.
