Pine nuts are pine conifer seeds that can be found in parks and gardens in Poland. However, nuts found on store shelves come from Spain, Greece, Cyprus, and Italy.
Pine nuts are a source of a wide variety of nutrients, including B vitamins, vitamin E, vitamin K, vitamin A, fiber, minerals such as zinc, sodium, potassium, phosphorus, magnesium, iron, calcium, and valuable fatty acids (saturated, monounsaturated, and polyunsaturated). Pinolenic acid, contained in nuts, regulates blood pressure, reduces the risk of arteriosclerosis, and also aids weight loss.
Pine nuts are primarily used to make Italian pesto, which also includes basil, Parmesan cheese, garlic, and olive oil. Pine nuts are also a great ingredient in sauces served with pasta.
