Roasted buckwheat groats are heat-treated (roasted) buckwheat grains with a dark brown color and a distinctive flavor. Previously called tartar, these groats were most popular in the Lublin region. Buckwheat is an excellent source of silicon, which protects the body from heart attacks, fatigue, and brittle hair and nails. The rutin and quercetin contained in the groats strengthen blood vessels and thus prevent the development of varicose veins. Due to its high-quality and easily digestible protein, it is highly valued by physically active people, vegans, and vegetarians. Buckwheat is a rich source of magnesium, so it should be consumed by coffee drinkers and those with concentration problems. Its low glycemic index and high fiber content ensure a longer-lasting feeling of satiety. Tatarka is used in cooking to prepare fillings, salads, meat dishes, cabbage rolls, dumplings, and pies. It can also be served sweet with fruits and dried fruits.
