Horseradish (Armoracia rusticana) is a root vegetable from the cruciferous family, native to Europe, North America, New Zealand, and parts of Asia. Used throughout the world for thousands of years, horseradish is an exceptionally healthy plant with numerous culinary and health-promoting properties.
Horseradish boasts, among other things, vitamin C to support immunity, B vitamins necessary for the proper functioning of the body, vitamin K and calcium to strengthen bones, and magnesium to support the nervous system. It can improve digestion and accelerate metabolism, making it recommended for heavy, fatty foods and for those on a weight-loss diet.
Horseradish was well-known and appreciated in old Polish cuisine. Served with dripping meat, it was said to relieve digestive discomfort. It has also long been an indispensable part of Easter celebrations.
