An element obtained from the butchering of a veal carcass. An element cut from behind, between the last thoracic vertebra and the first lumbar vertebra. Anteriorly, between the penultimate thoracic vertebra and the first cervical vertebra. Cut from below, parallel to the longissimus dorsi muscle, at a distance of 4 cm from the end of the longissimus insertion. The core canal is clean. The ribs are freed from the intercostal muscles for a length of approximately 8–10 cm from the beginning of the longissimus dorsalis muscle. Item cut into chops.
