Phacelia honey is a unique product made from the nectar of the blue phacelia (Phacelia tanacetifolia Benth), an annual seed plant native to California but also cultivated in Poland. Phacelia belongs to the borage family and is characterized by its strong fragrance. Phacelia honey is distinguished by its unusual light cream color, which can also be white. Its texture is smooth, and its flavor is delicate and subtle.

Facela honey contains:

• Simple sugars: glucose and fructose, which make up more than 70% of the content
• Complex sugars, including dextrins
• Proteins, especially proline
• Enzymes: glucose oxidase, diastase, invertase
• Essential oils
• Organic acids such as malic acid and lactic acid
• Yeasts and molds
• Minerals: potassium, calcium, sodium, iron, copper
• Vitamins C and B
