The quality of decaffeinated coffee is as good as regular coffee. Cafe Michel decaffeinated coffee is prepared with water. It is the only ecological method. The decaffeination process begins with the green coffee beans before roasting. Basically, green coffee beans are immersed in water. Due to the difference in concentration, the caffeine migrates from the beans into the water—it is washed out and dissolved. During this process, water is replaced, causing all the caffeine in the coffee beans to migrate into the water. This process removes the caffeine without altering the taste of the coffee.
