Appearance – A block with smooth and even surfaces, surrounded by jelly, a slight amount of rendered fat is acceptable.
Cross-section appearance – The color of the meat block is pink to dark pink. The rendered fat is white, straw-like, with acceptable turbidity. Most of the trimmings are minced to a diameter of 24 mm and are visible in cross-section.
Consistency – solid block, solid jelly at 15 °C and semi-liquid at 18 °C.
Taste and smell – suitable for sterilized and cured canned pork, noticeable pepper addition.
