Kutia is a traditional dish of Ukrainian, Belarusian, Russian, Lithuanian, and former Polish border cuisine. It is one of the 12 dishes commonly included in the East Slavic Christmas meal. It is made from wheat, poppy seeds, honey, and dried fruit; it may also contain milk, cream, malt, candied fruit peel, and almonds.
Spelt is a wheat grain. Popular in the Middle Ages and later forgotten, it is enjoying renewed popularity today due to its numerous nutritional values, which are among the highest of any other grain. 100 g of spelt provides 30% of the daily fiber and 21% protein requirements. Spelt is also rich in vitamins A, B, E, and K, and minerals such as magnesium, manganese, copper, potassium, selenium, calcium, and iron.
