Pectin is a naturally occurring substance in plants. It is a polysaccharide and is most commonly found in fruits, particularly citrus fruits, where it protects the fruit from drying out and protects it from microbes.
Due to its gelling and thickening properties, pectin can be used in the preparation of jellies, fruit jams and marmalades.
It also makes losing weight easier because it binds water, causing the food content to swell in the stomach and making us feel full for longer.

APPLICATION EXAMPLE
Prepare 2 kg of fruit and 1 kg of sugar. Pour half a glass of water into the prepared fruit and bring to a boil. Mix 33 g of pectin with 1 cup of sugar. Pour into boiling fruit and stir. Boil for 3 to 5 minutes. Pour in the remaining sugar and boil until completely dissolved. Add a teaspoon of citric acid dissolved in a little hot water. Mix thoroughly. Collect the foam and pour the hot jam into jars. Pasteurization is recommended for 20 minutes.
