Erythrol belongs to the sugar alcohols - polyols , and its most valuable property is its high sweetness (60-80% sucrose), while having zero energy value, zero glycemic index, and a very low insulin index II = 2. Erythrol is visually a sugar-like, unremarkable white powder. This unique sweetener is the best sugar substitute, but should be used slightly more than sucrose due to its sweetness.
