The traditional whisk used to froth matcha tea during the Japanese tea ceremony.
The broom, also known as a brush, is handcrafted from a single piece of light-colored bamboo. The precise cuts create a flexible mustache, slightly curved at the bottom and gathered at the top, and fitted with a special wooden handle.
Chasing works best with a bowl for preparing and drinking matcha. The bowl's vertical walls and wide base allow you to easily and comfortably "whisk" the matcha into the water and quickly create a layer of foam on the surface. Remember that the temperature of the water used to prepare matcha should not exceed 80°C.

Matcha Whipping Tips: It's best to start whisking the matcha slowly. Gently scrubbing the bottom of the bowl with the chasen whisk allows you to thoroughly mix all the matcha with the water. Then, move the chasen whisk higher, closer to the surface, and begin more vigorous whisking motions resembling the letter W or M for about 10-20 seconds.
Remember to work only with your wrist and not with your entire hand, which tires more quickly. A thin layer of foam should quickly form on the surface. Perfect frothing of the tea is possible thanks to the many flexible bamboo whiskers. The more whiskers in the chasnie, the easier it is to achieve the so-called "jasper mousse," or the perfect layer of foam.
For best results, the brush should be soaked in hot water before use and rinsed after use. Chasen shrinks when dried, becoming brittle and prone to damage, so it's worth storing it on a special Naoshi stand.

Storing chasen on a special stand will help ensure its longer lifespan and keep it in proper shape. However, do not enclose the chasen in plastic wrap or any other sealed container, as this may lead to the unintentional growth of mold on the bamboo handle.
