If stored for a long time under light-permeable conditions, it becomes dark brown, almost black.
Crystallizes, forming thick, hard crystals and settling in the liquid honey plasma. After crystallization, it usually takes on a brown color. The taste is sharp and even slightly burning. Buckwheat honey contains particularly high levels of easily absorbed magnesium and is recommended in an anti-cancer diet. It is helpful in the treatment of cardiovascular diseases, especially against the background of atherosclerosis. It is also helpful in liver diseases and vision, hearing, and memory impairments.
