Unroasted buckwheat groats are the most valuable of all buckwheat groats, and their worth has long been known. The buckwheat grains are fine and creamy in color. Unroasted buckwheat grains are characterized by a less intense and delicate flavor compared to roasted ones.
Buckwheat groats are a good source of protein, which is better absorbed than that from cereals, and are also rich in fiber, which stimulates intestinal peristalsis.
Buckwheat groats contain unique essential amino acids, meaning amino acids that we must supply to the body through food. One of these is lysine, which is indispensable for building proteins in muscles and bones and also has a positive effect on mental state.
Furthermore, buckwheat is rich in B vitamins, which positively affect the nervous system, and in significant amounts of immunity-strengthening mineral salts (calcium, phosphorus, magnesium) as well as iron, zinc, and iodine.
Buckwheat groats pair excellently with meat dishes, stews, or sauces. Combined with cheese, vegetables, or mushrooms, they make a delicious filling for pancakes, dumplings, or stuffed cabbage rolls. Ground groats can also be used for making bread, cakes, or pastries.

PREPARATION:
Rinse the groats and cover with water (2 cups of water per cup of groats). Place the pot on low heat and cook the porridge for about 10–15 minutes. It is best not to stir the groats, as they may stick, but if the heat is low, they should not burn. A teaspoon of oil can be added. Remove the groats from the stove, cover, and place in a warm spot so they can absorb the remaining water. This way, all the water in which the groats were cooked remains inside and is not poured down the sink.
