DESCRIPTION
Baked goods preserved with salt. Rinse thoroughly under running water before use. Nettle is used in soups, as a filling for dumplings, and as an addition to pies and other dishes.

PREPARATION
Recipe for nettle soup:
Prepare 2 large handfuls of young nettles, 1 onion, 1 carrot, 1 tablespoon butter, 1 tablespoon fine flour, 1.2 liters of meat broth or stock cube, 2-3 potatoes, salt, pepper, 1 egg yolk, 2 tablespoons cream, and 1 tablespoon lemon juice. Sauté the finely chopped onions in butter, cover with flour, and make a light roux. Add the meat broth or stock cube dissolved in boiling water. Add the grated carrots and peeled, diced potatoes, and simmer in the broth until soft. When the potatoes are tender, add the washed, finely chopped nettles. Season the soup with salt and pepper, add the egg yolk mixed with cream, and acidify with lemon juice. Do not boil further.
