Pickling, or curing, is one of the oldest methods for extending the shelf life of food or protecting it from spoilage. It involves subjecting food intended for human consumption—cucumbers, cabbage—or for animal feed—silage—to a fermentation process carried out by lactic acid bacteria.
Pickled vegetables are excellent snacks and an extremely rich source of vitamin C. In addition, these sour-tasting, fermented vegetables have a positive effect on the digestive system. Their regular consumption prevents many diseases, and due to their lower calorie content than their fresh counterparts, they are recommended for people on a weight-loss diet.
