Agave syrup has been known for centuries, especially in Mexico, where the largest quantities of this product are still produced today. The Indians living in Mexico at that time regularly drank a beverage made from fermented agave juice (tequila).
It consists of inulin, fiber, and small amounts of minerals—mainly potassium, iron, and calcium. Inulin, an alternative to fiber, regulates intestinal peristalsis, prolongs the feeling of fullness, and prevents constipation.
Agave nectar is used in many recipes instead of sugar. Vegans substitute it with honey. It can also be used to sweeten hot and cold beverages, as a topping for waffles and pancakes, and as an addition to cereal, ice cream, cottage cheese, and cakes.
