Enoki (Enokitake) mushrooms are popular in Asian cuisine, particularly Japanese, Korean, Vietnamese, and Chinese. They are exceptionally delicious (albeit tender), crispy, and firm.
They look a bit like fleshy sprouts, with long, thin legs ending in a tiny, round cap. They grow in clusters and have a delicate, fruity flavor. They offer a gentle resistance to the teeth—their crunch is an added bonus, so they're best eaten raw and added (at the very end) to soups.
