Goya capers are the buds of the thorny caper bush, a plant very popular in Mediterranean countries. They have a dark green color with light spots. They ripen in a day and are harvested immediately. Their quality depends on their size: the smaller, the more valuable. The Polish market mainly offers nonpareils, capotes, and fine capers. Capers have a characteristic bitter, salty flavor, so they should be thoroughly rinsed with water before eating. They are a perfect addition to many dishes, such as poultry, fish, salads, and pizza. Braising capers at high temperatures should be avoided. To preserve the characteristic flavor of capers, they are added to dishes just before serving. Capers also have beneficial health effects, supporting the digestive system and liver function, and relieving rheumatic complaints and flatulence.
