Sotto beans, available in several varieties, are the foundation of a vegetarian diet due to their high protein content. They contain phytohormones that relieve the symptoms of menopause. They also lower cholesterol and protect against cancer. They are an invaluable source of B vitamins, including vitamins E and A, potassium, and folic acid. Beans should be soaked in cold water for 10–12 hours before cooking. During soaking, the seeds increase in mass by 2–3 times. Swollen beans cook faster and don't burst. For the first 10 minutes, it's best to boil the beans over high heat and then simmer until tender. Beans take longer to cook in salted water, so it's best to add salt toward the end of cooking.
