Sourdough rye bread is a healthier alternative to traditional wheat yeast bread. Rye bread, characterized by its dark color and distinctive, slightly sour flavor, is rich in nutrients that support the digestive system and improve intestinal peristalsis; it also contains protein, the building block of tissue and muscle; energy-giving carbohydrates; B vitamins necessary for proper body function; and minerals such as iron, magnesium, calcium, potassium, phosphorus, and zinc. Due to the biochemical changes that occur during lactic acid fermentation, the nutrients contained in bread are easily absorbed by the body. Sourdough rye bread makes an excellent base for sandwiches and a great accompaniment to cabbage soup, sour soup, or grilled dishes.
