Shimeji mushrooms are small, thin, brown or white mushrooms (this variety is grown without access to light). They grow in lush clusters connected at the inedible base. Their characteristic feature is long, narrow stems ending in semicircular caps. Their structure and smell resemble miniature mushrooms. However, they taste somewhat spicy, with a hint of nuttiness and a touch of sweetness.
