The spice is the dried marjoram herb, which is harvested during its flowering period. This plant originates from the Middle East and is cultivated almost worldwide. Marjoram herb is a typical spice of Mediterranean countries. The spice has a characteristic aroma and a slightly burning taste.
In Polish cuisine, it is most commonly used in the preparation of homemade cold cuts, for seasoning meat dishes, sauces, roasts, stuffings, pies, vegetables, soups (pea, bean, potato, eel, sour rye, tripe), dumplings, and mushroom dishes. To enrich the flavor, marjoram is often used together with thyme, especially when a salt-free diet is required. The method of using marjoram depends on the type of dish. Meat and sausages are seasoned before baking or cooking, and the rest is added only at the final stage of preparation.
