Country blood sausage Olewnik (by weight) 0.55 kg

Made from pork heads, fat, hides, and pork blood, with the addition of buckwheat, salted, and steamed. Offal sausage in natural beef casing, twisted into 10-25 cm long pieces. The surface of the bars is clean, slightly moist; small air bubbles under the casing are permitted. Color in the cross-section of the product is brown; bright red spots, indicating underburning, are unacceptable. The consistency is quite firm and brittle, with good adhesion of the plaster. The taste and smell are typical of steamed offal sausage with the addition of buckwheat and blood; moderately salty, with a noticeable taste and aroma of added spices.
